Easy to make Delicious Cup Cakes















Hello everyone
I made some cup cakes over the weekend, and they were delicious. I got the recepy of this great baking book: Amy’s Baking Year by Amy-Beth-Ellice. I really love this book because it really makes baking simple and lots of fun. I also fell in love with the styling, there are some amazing pretty pictures in this book as well and the recipes are very easy and fun to make.
Ingredients:
For the cup cakes:
175g (60z) butter
175g (60z) caster sugar
175g (60z) self-raising flour
3 large eggs
1 tbs vanilla extract
For the buttercream:
225g (80z) butter
450g (11b) icing sugar
2-3 tbsp milk
1 tbs vanilla extract
pink food coloring (gel paste is best)
To decorate I used sugar flowers from Tesco
How to make:
step 1 Preheat the oven to 180 degrees and line a whole line of muffin tin with cup cake or muffin cases
step 2 Put the butter,castar sugar, eggs and vanilla extract into the bowl of a free-standing mixer (or you can use a handheld electric whisk and mixing bowl). Then sift in the flour, lifting the sieve quite high to incorporate air, and beat for 1-2 minutes until light and creamy. Be careful not to overmix. Divide the mixture evenly between the paper cases.
step 3 Bake in the preheated oven for 20-25 minutes or until well risen and a skewer inserted into one of the cakes comes out clean. Remove from the oven and leave to cool in the tin for 10 minutes. Transfer to a wire rack to cool completely.
step 4 Meanwhile prepare the buttercream. Beat the butter until soft and creamy. Sift the icing sugar and add to the cream butter in two stages alternating with the milk mixing on low speed. When fully incorporated, add the vanilla extract and beat for 3-5 minutes on a higher speed.
step 5 Use the tip of a cocktail stick to add a little bit of pink food coloring to the bowl of buttercream.
step 6 Spoon the buttercream in the piping bag fitted with a star nozzle and swirl it on top of the six cup cakes.
step 7 Dust with edible glitter and decorate with sugar flowers
